Found this recipe a LONG time ago, and it has become a favorite of ours (Barkley and myself) when cooking pork chops or pork steaks. Here we go.
Up to 4 decent sized pork chops - lightly seasoned (however you wish) and pan browned on both sides.
Spoon into the pan, around the pork, about 1/2 a regular sized jar of orange marmalade. Sprinkle on top of the marmalade, about 1/2 tsp of the following: allspice, gr cloves and ginger. Allow the marmalade to melt, and stir the spices in as it does so.
Take 1 cup of orange juice and add to the pan. Make sure you are stirring the pork chops and other ingredients around to mix thoroughly. Cover the pan and bring to a vigorous boil. While the 'sauce' is cooking, fix your vegetable (corn goes great!). Remove the lid, turn the chops, lower heat and let the sauce reduce until it becomes quite thick.
Serve. It's great! Made it tonight with 2 pork steaks and 2 chops. We'll have the chops for lunch tomorrow!
